German Thyme Seeds
When should I plant
Start seeds in flats 8-10 weeks before the last frost. Sow seeds on top of the growing medium and cover with a thin layer of soil mix. Keep moist until germination. Transplant to individual containers when plants have 4 true leaves. Pinch off growing tips of upright varieties to encourage bushier growth.
Site consideration
It requires full sun, well-drained, light soil, even if poor in nutrients, and good air circulation to mimic its Mediterranean origins. Plant seeds shallowly (surface sow or just press in) after the last frost. Provide consistent moisture until germination, then gradually reduce watering to develop drought tolerance. Space plants 6-8 inches apart for compact growth.
Water
Keep the soil moist but not soggy during germination by lightly spraying. Seeds need moisture to sprout but cannot tolerate standing water. Once seedlings are established (a few weeks), let the soil dry out between waterings, as established thyme prefers dry, well-drained conditions and is drought-tolerant.
Sunlight
Thyme needs plenty of bright light, ideally 6-8 hours of full sun daily, especially for strong growth. Seeds also need light to germinate, so surface sow or barely cover them and keep moist, then ensure they get sun for strong plants, though afternoon shade helps in very hot climates.
Seed Germination
Like many perennial herbs, thyme is known to be fairly delicate. Seeds typically germinate within 14-28 days.
Transplant
Wait until after the last frost, ideally when soil reaches around 60°F. Harden off seedlings before transplanting. Move them to a sunny spot with well-draining, lean soil Space plants 6-12 inches apart. Water well initially, then allow soil to dry between waterings, as thyme prefers dry conditions. You can transplant young starts from indoor pots or divide mature, woody plants in spring, ensuring they get sun and don't sit in soggy soil to prevent root rot.

Fertilization
Fertilize German thyme lightly after germination, using either compost mixed into the soil or a half-strength liquid fertilizer every few weeks. Thyme is not a heavy feeder, so focus on providing well-draining soil and adequate sunlight to avoid over-fertilizing, which can dilute its flavor. Start with good organic matter in the soil, then feed sparingly, especially once the plants are established.
Pruning
Thyme doesn’t require much care other than general pruning. Each spring, cut thyme plants back to half of its growth, as this encourages the plant to retain tender stems and a bushy appearance. Start over with each plant after four years of growth, as it will begin to become woodier during that time. Thyme can withstand winter and come back in the spring, but in colder climates add pine boughs or a heavy layer of mulch over the thyme to protect it from the cold.
Weed control
Control weeds with mulch (gravel, newspaper) or landscape fabric to block growth, hand-pull young weeds weekly, and plant densely so thyme smothers competition; for tough weeds, use spot-treatments like applying glyphosate with a brush, but generally, dense thyme growth and regular maintenance are key.
Harvest
Harvest thyme in the morning after dew dries, just before flowering for peak flavor, cutting long, non-woody stems above a leaf node to encourage bushier growth. For culinary use, snip sprigs as needed or take up to a third of the plant, avoiding woody parts and fall harvesting to protect the perennial. Rinse, pat dry, strip leaves from stems, and use fresh or store them for later.
Seed Storage
The seeds will maintain a high germination percentage if stored under proper conditions. How long your seeds remain viable will depend on the temperature and moisture levels the seeds are exposed to. Seeds which are improperly stored will quickly deteriorate if unprotected against high humidity and dramatic temperature fluctuations day after day.

Glass jar or plastic containers with snap-on lids works well too, add a packet of desiccant before sealing into the seed, such as silica gel to remove any moisture remains in the storage container. Seed stored under these conditions will remain viable for as long as years.
